Skillet Coconut Shrimp with Apricot Sauce

Prep Time: 30 minutes
Start To Finish: 30 minutes

½ cup apricot preserves
1 teaspoon apple cider vinegar
¼ teaspoon crushed red pepper flakes
1 lb uncooked deveined peeled medium shrimp (21 to 25 count),thawed if frozen, tail shells removed
½ cup Original Bisquick mix
½ teaspoon ground red pepper (cayenne)
2 tablespoons milk
1 egg
2 cups flaked coconut
About 1 1/3 cups vegetable oil

1. In a small bowl, mix preserves, vinegar and pepper flakes; set aside.

2. Pat shrimp dry with paper towels. In shallow dish, mix Bisquick mix, red pepper, milk and egg with fork until well blended. In another shallow dish, place coconut.

3. In 12-inch skillet, heat ¼ inch oil over medium heat. Working with half of the shrimp at a time, dip each shrimp into egg mixture, shaking off excess batter; lightly toss in coconut. Place in hot oil in single layer; cook 3 to 4 minutes, turning once, until coating is crisp and golden brown, and shrimp are pink. Serve with apricot sauce.

I love quick and easy recipes this book is full of them. I work full time and can still have dinner on the table by 5:30.

THis is a pretty good cookbook. There are really some fun and new takes on everyday simple recipies. Lots of quick dinner ideas. I would recommend it for a go to when youre in a hurry and dont want to make anything to extravagant : )

Quick, easy, fast and Delicious!

I'm a single Mom who works full-time 9-5 and gets home at 5:20pm using this book the last couple of weeks dinner has been on the table by 6pm with NO complaints from my kids (12 & 16). When I received the book I started looking thru it and had to stop to get some post-its to mark the recipes. By the time I was done I had a lot (over 25) pages marked. I made my grocery list and had everything I needed on hand and dinners have been a breeze!
